In particular here olives were processed. In the center of the diagram note the “Crushing Mill.” On the left side are two locations for “niches” in the wall that anchored beams that pressed the olive mash that had been taken from the “Crushing Mill.” Slightly above center note the ritual bath (miqveh, here spelled ”miqweh”).
