View looking northeast at the collecting vat. The “squishing area” is located just to the left of the student standing on the wall (where people are peering down into a hole).
Just below the student are two drains through which the grape juice would flow into the circular vat (lower right). From there the juice would be scooped into jars and stored in caves and allowed to ferment.
